Piri-Piri Chicken


1 tsp salt

2 tsp Vindaloo Spice Mix

2 tsp runny honey

3 tbsp oil

5 garlic cloves, grated

1 whole chicken (any size)

1 lime


1. Either buy the chicken already spatchcocked or remove the spine to do this yourself.

2. Combine salt, Vindaloo Spice Mix, honey, oil and garlic. Rub the chicken in the marinade and massage so it is well coated. Store in the fridge for a few hours so that the marinade can get into the chicken.

3. Remove from the fridge about 30 minutes before roasting to come up to room temperature. Preheat the oven to 180c fan and roast the chicken for 45 minutes. Serve with some lime wedges and chips.
